Job Overview

Responsibilities:
– To deputies in the Head Chef’s absence
– Assist in selecting, training, supervising, developing, disciplining and counselling staff in the kitchen
– Coordinate and participate in the cooking and planning activities of the Head Chef and Kitchen and Personnel
– Direct, create and participate in planning menus and utilization of food surplus
– Assist in maintaining inventory; estimate food consumption and purchase or requisition food and non-food items necessary for kitchen operation
– Direct and correct the presentation and portioning of food according to company standards
– Confer with Head Chef to coordinate policies and procedures in the kitchen
– Perform other duties as assigned

Experience and Skills:
– Experience within a Sous Chef position
– Formal Training in Culinary Arts an asset; not required

– Knowledge of purchasing, ordering, receiving, food costing and inventory procedures an asset; not required

This is a physically demanding job. You must be able to stand for long periods of time, use stairs, lift reasonably heavy items.
